Ingredients

berenjena 1 whole [, removed ends, slice ½ in pcs]
yellow squash 2 pcs [, sliced diagonally ½ inch]
olive oil 2 cuillères à soupe
seasoned vinegar 2 cuillères à soupe
feta cheese 4 onces
pimiento morrón 2 whole [, washed, roasted,]
Pepper 1 pinch [, for taste]
basil 2 cuillères à soupe, chopped
Calamata olives 2 cuillères à soupe, chopped


Produce
1. In a small mixing bowl, combine the first 5 ingredients. Whisk well and set aside.
2. In a large bowl, combine squash and eggplant. Drizzle olive oil and toss well.
3. Grill vegetables according to preference.
4. Arrange grilled vegetables in a platter. Serve with the remainder of ingredients.
