Pork Medallion Served with Wild Rice

Ingredients

olive oil 3 Tablespoons
rice vinegar 1 Tablespoon
pork tenderloin 8 ounces
red bell pepper 4 ounces [, small, diced]
black pepper 1 teaspoon [, coarse]
sugar 1 teaspoon
wild rice 8 ounces [, cooked according to direction]
parsley 1 Tablespoon [, chopped]
shallot 1 whole [, finely chopped]
kidney beans 4 ounces [, red, rinsed and drained]
Panda Brand Oyster Flavored Sauce 1 Tablespoon
Premium Soy Sauce 3 Tablespoons
Sesame Oil (Pure) 1 teaspoon


Produce
  1. In a small bowl, combine Premium Soy Sauce, 2 tbsp olive oil, rice vinegar, sugar, Sesame Oil and black pepper (premium soy dressing). Mix well and set aside.
  2. Massage pork loin with 1 tbsp Panda Oyster Flavored Sauce and 1 tsp coarse black pepper.
  3. In a heated pan with oil, pan-fry pork loin until golden brown or until done. Let sit for 10 minutes. Slice into 1/4-inch thick pieces.
  4. Combine wild rice, kidney beans, shallot, parsley and red bell pepper in a medium bowl.
  5. Stir in premium soy dressing and serve with sliced pork loin.
