Rice-Filled Bell Peppers with Black Bean Garlic Sauce

Ingredients

peas and carrots 4 ounces
button mushrooms 4 ounces [, small, , diced]
shitake mushrooms 4 ounces [, small, , diced]
bell peppers 2 whole [, removed stem]
rice 4 ounces [, uncooked]
water 1 cup
onion 2 ounces [, small, , diced]
butter 2 Tablespoons
Black Bean Garlic Sauce 3 Tablespoons


Produce
  1. Saute rice with 2 tablespoons butter. Add onion, cook mixture until rice is coated with butter.
  2. Add Black Bean Garlic Sauce and vegetables. Stir well.
  3. Add water, cover the pot. Bring to a boil, then simmer. Cook for 15 minutes or until done.
  4. Spoon mixture over bell pepper.
  5. Bake for 5 minutes at 350 degrees.
