Roasted Ginger Maple Salmon

Ingredients

salmon filets 1 pound [, about 1-inch thick]
white vinegar 3 Tablespoons [(ginger maple sauce)]
maple syrup 3 Tablespoons [(ginger maple sauce)]
soba noodles 8 ounces [, cooked, , or fresh rice]
cilantro 1 teaspoon
ginger root 1 Tablespoon [, fresh grated, including juice, (ginger maple sauce)]
sesame seeds 1 teaspoon
garlic cloves 2 pieces [, minced, (ginger maple sauce)]
Premium Soy Sauce 1/4 cup [(ginger maple sauce)]


Produce
  1. Combine all sauce ingredients in a small bowl and microwave until it just reaches a boil. Remove from heat and set aside.
  2. Preheat oven to 425F. Spread salmon fillets in a single layer, skin side down, in a baking pan sprayed with cooking oil. Roast uncovered, about 9-11 minutes, until salmon is just barely cooked through.
  3. Serve over noodles or rice, and top with spoonfuls of sauce.
  4. Garnish with fresh cilantro and sesame seeds.
