Sauteed Fish with Black Bean Garlic Sauce

Ingredients

red snapper 8 ounces [, cut into 1" cubes]
asparagus 4 ounces [, cut into 1/2" diagonal pieces]
red bell peppers 1/2 ounce [, for garnishing]
cornstarch 3-1/2 Tablespoons
sugar 1/2 teaspoon
water 3 Tablespoons
oil 4 Tablespoons
Black Bean Garlic Sauce 1-1/2 Tablespoons


Produce
  1. Place red snapper with 3 tablespoons cornstarch. Pat dry.
  2. Sautee red snapper with 3 tablespoons oil, cook until golden brown.
  3. Mix 1/2 tablespoon of cornstarch, 1/2 teaspoon sugar and 3 tablespoons water together. Set aside.
  4. Stir-fry asparagus for 2 minutes with remainder oil. Add 1-1/2 tablespoons of Black Bean Garlic Sauce. Add red snapper and combine mixture of cornstarch, sugar and water. Cook and stir until sauce is thicken.
  5. Place sliced red bell peppers on top to garnish (optional).
