How to make it

  1. 芋頭去皮刨絲炸成鵲巢狀裝盤備用

  2. 黃耳用水浸發至軟身灼熟備用

  3. 預先鵪鶉蛋調味水拌匀煮滾備用,再放入已蒸熟去鵪鶉蛋浸泡15分鐘。

  4. 鴨胸肉用10分鐘

  5. 中火燒熱油鑊至356°F,倒入鴨胸肉油至八成熟備用,再燒熱油加入杏鮑菇炸至金黃色瀝備用

  6. 再次燒熱油,下蓉爆香,再加入黃耳,鴨胸肉,杏鮑菇,彩椒和調味料炒匀,最後加入鵪鶉蛋輕略炒,裝入鵲巢即可。
