How to make it
Separate the oysters from the shells and place them in a large bowl, set the bottom shells aside for later use.
Marinate the oysters with lemon juice and black pepper for about 10 minutes.
Mix the potato starch, flour, salad oil, water, egg, baking soda, baking powder and salt to create a mixture. Allow it to rest for 10 minutes.
Place all the oysters in the mixture and mix thoroughly, then deep fry one dozen of oysters in 200°C(400°F) oil and place them back on the shells.
For the second dozen of oysters, roll them in bread crumbs, deep fry them and place them back on the shells.
For the dipping sauce, simply mix all the ingredients together and serve with the fried oysters.
