Peel the sweet potatoes and then cut them into sticks about 0.5 cm wide and a few inches long.
Place them into a mixing bowl and toss with olive oil and the spices.
Spread them out onto a greased baking sheet and bake for 15 minutes and then flip fries over and cook for another 10 minutes until that side is crisp, don’t let them burn.
Serve hot with a side of Lee Kum Kee Sriracha Mayo.
