How to make it

  1. Add the shallots, dried shrimp, Lee Kum Kee Chili Garlic Sauce, Minced Garlic, and Thai chilies into a mortar and pestle or food processor. Pound or pulse ingredients into ground and fully combined, and set aside.
  2. In a large wok or skillet, heat the high temperature cooking oil until it just starts to smoke. Add your sambal paste from step 1 and the shrimp, and cook for 30 seconds until the shrimp starts to turn pink. Crack in the eggs and scramble for about 20 seconds until fully set. Stir-fry everything together until fragrant, about 30 seconds.
  3. Add your day old rice and carefully fold in to ensure no grains are broken. Season with Lee Kum Kee Sweet Soy, Premium Soy, Hoisin, and Chicken Bouillon Powder. Mix by folding gently and occasionally pressing the rice against the pan so it gets fragrant.
  4. Stir in green onion, cilantro, and fried shallots, reserving some from garnish, then remove from the heat.
  5. Garnish with the remaining green onion, cilantro, and fried shallots, and finish with a sprinkle of white pepper. Serve and enjoy!
