This simple chicken stir fry recipe is a great dinner that can be on the table in just 30 minutes. The key here is to velvet the chicken in the below marinade ingredients. This step will ensure your chicken breast stays tender as it cooks. It’s a restaurant secret trick that will take your stir-fry cooking to the next level!
Combine chicken breast pieces with cornstarch, Lee Kum Kee Premium Soy Sauce, water, vegetable oil, and a pinch of salt. Once thoroughly combined, let sit for 15-20 minutes.
While the chicken marinates, you can prep your other veggies and steam the rice. At this time, also combine the Lee Kum Kee Black Bean Garlic Sauce, Panda Brand Oyster Sauce, a tablespoon of water, and black pepper to taste in a small bowl. This will be your sauce mix for the stir fry.
Heat a tablespoon of vegetable oil in a wok or large sauté pan on high heat. Add the chicken in one even layer, and sear for 30 seconds on each side just to color through. Remove from heat.
Add a little more oil if needed, and lower heat to medium high. Add your diced bell peppers and toss for 1-2 minutes to stir fry. Add back in the chicken and cook for another minute, then pour in your sauce mix. Toss well to combine until the sauce thoroughly coats the chicken and peppers, another 1-2 minutes. This should also fully cook through the chicken.
