Give turkey a quick and easy upgrade after your big holiday dinner with turkey pot pie phyllo rolls! We used smoked turkey for this recipe but it's just as good with any leftover turkey you may have going into Boxing Day.

 


These turkey pot pie phyllo rolls have a few enticing twists: the flavor base is made with Lee Kum Kee Premium Oyster Sauce and Char Siu Sauce to add a sweet and savory flavor to the turkey. There's also plenty of fresh veggies inside to make this a comforting and hearty nutritious treat!

How to make it

  1. Combine all ingredients for the sauce mix, including the Lee Kum Kee Premium Oyster Sauce and Char Siu Sauce, and set aside.
  2. Saute onions, bacon and potatoes until cooked through. Add diced smoked or leftover turkey, red & green bell peppers, and sauce mix ingredients. Stir well to make filling. Let cool and set aside.
  3. Place a layer of plastic wrap on a work surface. Lay smoked or leftover turkey slices flat to form a rectangle and spread a layer of filling on top. Roll up to form a log and set in the freezer to chill until cold and the filling is set.
  4. Brush melted butter over each filo pastry sheet for 4–5 layers. Place frozen filling onto pastry sheet, roll to wrap filling inside. Seal edges with beaten egg, and brush some over sealed pastry.
  5. Bake pastry roll 15–20 minutes in 150° Celsius preheated oven until golden brown. Serve and enjoy!
