How to make it

  1. Want a quick and tasty vegetable fried rice recipe? Look no further than this satisfying vegetarian fried rice recipe that is packed with umami flavor, perfect for weeknight dinners. Using the best soy sauce, fresh vegetables, and other classic fried rice seasonings, this recipe makes a mouth-watering vegetable fried rice.

  2. Prepare the Ingredients:

      • Gather all your ingredients and have them ready. Make sure the vegetables are diced and the rice is prepared.
  3. Cook the Eggs:

      • Heat 1 Tbsp. of cooking oil in a large skillet or wok over medium-high heat. Add the whisked eggs, stirring occasionally until they are fully cooked. Remove the eggs from the skillet and set aside.
  4. Sauté the Vegetables:

      • In the same skillet, add the remaining 1 Tbsp. of cooking oil and cold pressed sesame oil. Add the diced onion and carrots, and sauté for 2-3 minutes until they begin to soften. Then, add the snow peas, chopped broccoli, minced ginger, and minced garlic. Cook for another 3-4 minutes until the vegetables are tender-crisp.
  5. Combine Rice and Seasonings:

      • Add the rice to the skillet, stirring well to combine with the vegetables. Season with salt, pepper, and red pepper flakes. Pour in the soy sauce and mix thoroughly.
  6. Finish and Serve:

      • Stir in the cooked eggs and sliced green onions. Cook for an additional 1-2 minutes until everything is heated through. If desired, add a drizzle of sriracha hot sauce for an extra kick. Serve hot and enjoy your delicious, quick, and simple vegetable fried rice!

    Helpful Tips:
    • Use Day-Old Rice:
      • For the best texture, use leftover rice that has been refrigerated. Freshly cooked rice can be too moist and clump together.
    • Customize Vegetables:
      • Feel free to add or substitute other vegetables like bell peppers, mushrooms, or baby corn based on your preference. You can even use frozen vegetables!
    • High Heat Cooking:
      • Ensure your skillet or wok is hot enough to achieve a nice, slightly charred flavor.
