How to make it

  1. 茄子洗淨,斜切成條,均勻裹上玉米澱粉,備用。
  2. 起鍋熱油,燒至約五成熱,放入茄子炸 2–3 分鐘,至表面微金黃且熟透,撈出瀝油備用。
  3. 鍋中留少許底油,爆香蒜碎,加入芡汁後,煮至微滾。
  4. 加入茄子與香菜,快速翻炒均勻,即可出鍋。
